BACON CHEESE PIE

10 slices crisp cooked bacon, crumbled

1/3 cup minced onion

1 cup shredded Swiss cheese, natural, not processed (about 4 ounces)

4 eggs

2 cups heavy or light cream

1/2 teaspoon salt

1/8 teaspoon ground black pepper

Dash ground red pepper (optional)

 

1. Preheat oven to 425 degrees. Sprinkle bacon, onion and cheese in bottom of well greased pie tin. Beat eggs slightly in a bowl. Beat heavy cream, salt, black pepper and red pepper, if using. Pour into pie shell.

2. Bake at 425 for 15 minutes, then reduce heat to 300 and bake 30 minutes longer, or until knife inserted 1 inch from edge comes out clean. Let stand 10 minutes before cutting into wedges.
