2 tablespoons
olive or vegetable oil
1 medium onion,
chopped
2 garlic cloves,
minced
1/4 cup chopped
fresh parsley
1 1/2 teaspoons
salt
1/4 teaspoon
crushed saffron , crushed, or curry powder
1/4 teaspoon
pepper
1 bay leaf
1 quart (4 cups)
water
1 teaspoon lemon
juice
1 pound fish filets , cut into 2 inch pieces
1 (12-ounce)
package (3 cups) frozen uncooked shrimp
1 (6-ounce)
package (3/4 cup) frozen uncooked crabmeat or lobster meat
1 pint (2 cups)
fresh oysters or clams, undrained
1 (8-ounce) can tomato sauce
1. Heat oil in Dutch oven or large saucepan over
medium-high heat until hot. Add onion and garlic; cook and stir 2 to 3 minutes
or until crisp-tender.
2. Add all remaining ingredients; mix well. Bring to a
boil. Reduce heat to low; cover and simmer 20 to 30 minutes or until shrimp
turn pink, stirring occasionally. Remove bay leaf. Serve in large soup bowls.
