Ham and Bean Soup |

8 oz cubed ham
1/4 cup finely diced celery
1 cup water
1 cup low-sodium chicken broth
1 can Eden Black Soy Beans
1/4 cup tiny diced carrot
2 teaspoons minced onion
1/4 teaspoon minced garlic (optional)
1/8 teaspoon Cayenne Pepper
1/4 teaspoon Cumin
1/4 teaspoon Salt
1. In a medium sauce pan brown the ham. Add 1 cup of water and
scrape glaze off bottom of pan. Add low-sodium chicken broth.
2. Drain the water from the can of beans. Add beans to the sauce pan.
3. Add all other ingredients. Stir. Bring to a boil; turn down heat and simmer
for at least 1 hour to bring out the flavors -- the longer, the better (2+
hours being best.)
