Lemon Dill Halibut |

4 skinless fillets of halibut, each 5 ounces
Salt and freshly ground pepper to taste
1/3 cup minced green onion (white part only)
6 tablespoons finely chopped fresh dill feathers (not stems)
6 tablespoons finely chopped parsley
6 tablespoons extra virgin olive oil
Slender lemon wedges
1. Preheat oven to 350 degrees. Wipe the fish dry. Season generously with salt and pepper.
2. Arrange the fillets in a single layer in a shallow oiled
baking dish. Sprinkle with the onions,
dill and parsley. Spoon the oil over the
fish.
3. Bake about 10 minutes, basting occasionally, until the fish is just opaque
in the center.
4. Spoon some of the juices over each serving and garnish with lemon wedges.
