WESTERN HERB EGGS

4 ounces ham --flaked

8 large eggs

2 teaspoons Dijon mustard

1/2 cup sour cream

2 teaspoons fresh chives -- chopped

2 teaspoons fresh parsley -- chopped

3/4 cup shredded sharp Cheddar cheese

 

1. Preheat oven to 375º. Grease 4-1 cup ramekins. Divide flaked ham between ramekins.

 

2. Whisk together eggs, mustard and sour cream. Stir in herbs and top with shredded cheese.

 

3. Bake 25-30 minutes until golden and set.
